A 16th-centuryolive mill.

Five centuries of history, two ancient olive mills.

Our story.

In Salento a trappeto is the ancient hypogeum olive mill carved into the stone.

Two olive mills underground

Our restaurant lives within the walls of a 16th-century building in Galatina that housed two of them: two millstones and two crews of workers milling olives underground.

A stone amphora in the olive mill

The amphora and the drill

Freshly pressed oil passed from the amphorae into the storage jars and was left to rest there: little by little it rose to the top, while the water stayed at the bottom.
